Floresmilo Ojeda Melendres and his family own La Ponderosa, a 2-hectare farm situated at 1850-1900 masl in Tabaconas. The farm's very humid climate, with almost daily rain, presents challenges but also fosters a unique micro-climate ideal for high-quality Gesha coffee.
Due to the humidity, Floresmilo exclusively produces washed coffee. Picked cherries are rinsed, floated, and pre-fermented overnight in bags. They are pulped the following morning and fermented for 48 hours. Drying takes place on covered raised beds for approximately 20 days until 11% moisture content is achieved. The coffee is then rested for two weeks before delivery.
Here in the Roastery this is our favourite coffee of the year so far, a wonderfully clean, floral and crisp coffee. Think bright citrus, reminiscent of pomelo and Amalfi lemon, complimented by fragrant florals like jasmine and white flowers, beautifully balanced with the sweetness of pineapple cube sweets. A delicious coffee to welcome in the warmer months ahead.
