David Flores and his family, spurred by an unexpected premium for their exceptional coffee, embarked on a journey into the world of specialty coffee production. Driven by curiosity, they dedicated themselves to mastering every aspect of cultivation, from varietal selection and soil health to meticulous harvesting and processing techniques.

Last year, they upgraded their infrastructure, investing in new fermentation tanks, drying beds, and a greenhouse. They now meticulously monitor sugar content, mucilage pH, and moisture levels, ensuring optimal conditions at each stage. This blend of traditional expertise and scientific measurement allows for precise control, highlighting the value of combining both approaches.This year they secured both organic and Rainforest Alliance certifications.

A new addition to our mellow and balanced range, expect notes of blackberry, apple, and milk chocolate, a great everyday coffee.
