Victorio’s choice to preserve this heritage variety results in a cup that’s bright and complex, with cranberry, blood orange and a tea-like finish, thanks to extended fermentation.
Next, Angelical Pacas from the Jazmín family showcases the Pacas varietal — a natural Bourbon mutation prized for its dwarf size, allowing for denser planting and greater yields without sacrificing quality. This washed lot bursts with notes of juicy orange, nectarine, and rich fudge, highlighting the care behind every stage from farm to café.
Finally, Nancy Parainema, a new lot from long-time partner Nancy Hernández, offers star fruit, creamy cashew, and brown sugar sweetness. Grown on her dream farm, Jazmín, this Parainema variety is both resilient and award-winning — earning multiple Cup of Excellence honours for its standout profile.
