Pink Bourbon is one of our favourite varieties here at Kiss the Hippo. This much-discussed cultivar was once believed to be a natural mutation of Red Bourbon, with cherries maturing to a pink hue. However, recent genetic testing has revealed its origins in Ethiopia, which explains its delightful floral notes and intense fruit flavours.
This particular lot comes from husband-and-wife team Alirio and Anayibe Muñoz. Together they make up the Los Guacharos Collective in Pitalito Huila. The collective has been moving away from traditional fertilisers and pesticides in an effort to prioritise sustainability on their farms. Alirio’s focus has been on specialising in more exotic cultivars, including Pink Bourbon, Bourbon Aji, Chiroso, and Sidra.
This lot displays a wonderful red berry-dominant flavour profile with a delicate, complex floral finish a classic, delicious washed coffee.
