Gaitania is located in the southern portion of Tolima, bordering Huila and Cauca, in the foothills of the Northern Andes. The Gaitania area is dominated by the Huila volcano, which is the fourth tallest mountain in Colombia and is topped by a glacier.
This coffee is produced by the Nasa Wesx indigenous community. Coffee here is a combination of traditional shade-grown methods and Indigenous knowledge and techniques. The coffee plants are grown under a protective canopy of trees, ensuring a consistent temperature and moisture level while providing a vital habitat for wildlife. Additionally, the coffee is organic certified in Colombia. Each cup of Gaitania is therefore a true reflection of the region's unique culture and environment.
This particular lot has been naturally processed with an additional 40-hour anaerobic fermentation. This imbues the coffee with lots of dark fruit and floral flavours, as well as fermented plum, blackcurrant and violet – reminiscent of red wine.
