Indochina, our Asian coffee importers, have worked in partnership with Yunnan Coffee Traders since 2016. As a pioneer of the Chinese specialty coffee industry in the Menglian County of Yunnan, YCT operates farming, mill, research, and training facilities.
Its mission is threefold: to create opportunities for Yunnan farmers to engage in sustainable production practices; to employ industry best-practices for sourcing, processing, wholesaling, and exporting coffees; and to supply coffee to importers and roasters who care about sustainability, traceability, and transparency.
Aqi Badu is named after the local village where its cherries are harvested. These cherries are run through an optical color sorter to remove foreign material and cherries which are over or under-ripe. The cherries are then fermented in a tank of fresh water for around two days, with time and temperature monitored regularly to ensure over-fermentation doesn’t occur. The cherries are finally spread and dried on raised beds on the drying patio, prior to hulling (the removal of dried skin and fruit flesh).
